Happy August! Can you believe we're here already? Last we remember, we were freezing our little green butts off in 30-degree weather while attempting to hail a cab on  West Broadway in the middle of a white-out. NOT fun. Fast-forward, we've got sunny skies, heat waves, and we're all nearly naked as we step out the front door: HOT CHILD IN THE CITY!

In our efforts to keep cool and hydrated while kicking ass and taking names at LuliTonix Headquarters, we've been whipping up some refreshing summer blends for our own personal gulping enjoyment. We loved this week's favorite so much, we thought we'd share it with you to blend and enjoy at home, too: a luscious watermelon blend with cucumber, fennel, and mint. Equal parts cooling and hydrating thanks to both the watermelon's and cucumber's naturally high water content. Of course, it wouldn't be Luli-fied without a hit of nuanced, tastebud-seducing infusion, so we upped the ante by throwing in a few slices of fennel and freshly-picked mint leaves for the ultimate in cooling power. And, if you're feeling a little dirty and overcome by the need to unwind after a long week, allow us to recommend a splash of Hendrick's gin for the perfectly balanced, blended cocktail. It's five o'clock somewhere!

Refreshing Watermelon Blend with Cucumber, Fennel, and Mint

Serves 3-4


1/4 of a large watermelon, about 2 pounds, rind removed and cut into chunks

1 large cucumber, peeled and roughly chopped, about 1 cup

1 small fennel bulb, fronds removed, roughly chopped (about 1/2 cup)

1/4 cup mint leaves, tightly packed

2 tablespoons fresh squeezed lime juice

Pinch of Himalayan sea salt


1. Place all ingredients into a Vitamix or high-powered blender. Blend for about 20 seconds. Remove lid, checking for stray mint leaves. Replace lid and blend for an additional 20 seconds or so. 

2. Allow blend to rest so the foam settles. Stir to re-incorporate ingredients and serve immediately.
