Positively chockfull of superfoods and good fats (literally every ingredient is teeming with health benefits!), this delicious vegan recipe is perfect for guilt-free holiday yumminess, and is oh-so-easy to make! (Phew!)
(Makes around 20)
2 Cups Organic Shredded Coconut
1/2 Cup Raw Cacao Nibs (unsweetened)
1 Tbsp Vanilla
1/2 Tsp Himalayan Salt (or celtic sea salt works too)
1/2 - 1 Cup Organic Coconut Sugar or Nectar (Depending on desired sweetness... Pssst! Dates also work REALLY well).
1 Tbsp Raw Maca
1/3 Cup Organic Coconut Oil
4 Oz Cacao Butter
1/2 Cup Raw Cacao Powder
Pinch Himalayan Salt
2 Tbsp Coconut Sugar (or sweetener of choice)
Blend shredded coconut in your food processor (or vitamix with a little water) until it is smooth and creamy. Pour the creamy mixture into a large bowl and add coconut sugar, coconut oil, vanilla, cacao nibs and salt, and mix. Roll into balls or put a dollop into small cupcake holders.
Bring a saucepan of water (about quarter full) to boil and then turn the heat down to simmering. Add cacao butter to a heatproof bowl and place over the simmering water in the saucepan. Melt the butter, stirring occassionally, and when almost all of it is melted, remove the bowl from the heat and let the butter melt further on the countertop. Once the butter has melted, add raw cacao powder, salt and coconut sugar, then mix.
Scoop topping onto each ball, and refrigerate. PRESTO!
