The lovely and eloquent Gena Hamshaw is someone by whom we have been inspired and guided since the very early days of her incredible blog Choosing Raw. [note from Luli: As I have gushed to her many times, choosing raw, with its accessible, no nonsense, no fuss approach to recipe and nutrition and nourishment - was a real guiding force for me on my journey of Raw Food Passion. Her amazing cashew-pizza cheese was the first raw food recipe i ever tried, and remains one of my staples!]


For me, feeling fab is about nourishing my body with simple, healthful foods: soups, whole grains, salads, and smoothies, of course! This blueberry, kale, and mint smoothie is one of my favorites. It's sweet but not too sugary, packed with antioxidants and healthy fats, and it packs in a lot of greens in spite of the crowd-friendly taste. I love sipping on it as a refreshing afternoon snack or a light breakfast.


Blueberry, Mint, and Kale Smoothie

[Makes 4 Cups]

1 banana
2 cups frozen blueberries
1/2 hass avocado (about 1 1/2 ounces)
1 tablespoon flax meal
2 cups almond milk
2 1/2 cups kale or spinach, tightly packed
1/4 cup fresh mint, tightly packed
1 pitted date (2 if you prefer a bit more sweetness)

Blend all the ingredients in a high-speed blender until smooth. Serve.
