We're HUGE fans of avocado around here -- huge. We use them in GLOW! and FRESH!, we like them in the standard everyday salad and guacamole, but we also like them in the not-so-standard raw, chocolate mousse and blended green soups. Avocado is just that good from both a culinary perspective as well as a nutritional perspective.

Avocados contain a plethora of healthy fats, one being oleic acid, a monounsaturated fat, that may help to lower cholesterol. Avocados are also a good source of potassium, a mineral that helps regulate blood pressure, and are rich in other essential nutrients like fiber, B vitamins, vitamin E, C, K, folate, riboflavin, niacin, and magnesium. They are also touted as a beauty food, beneficial both in weight loss and in getting the "glow" back -- ever hear of people using them for homemade face masks? Plus, and this one is particularly important, avocado actually helps the absorption of many nutrients in GREENS when consumed together.
