Chocolate Cake


  • 1 cup almond flour
  • 1/2 cup raw cacao powder
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • ½ tsp Himalayan salt
  • ½ cup maple syrup
  • ½ cup melted coconut oil
  • 4 eggs, beaten
  • ½ cup cacao nibs
  • 1 tsp vanilla

Chocolate Mint Frosting

  • 1/2 cup cacao butter or coconut oil
  • 1/4 cup maple syrup (or stevia if sugar-free floats your boat)
  • 1/2 cup cacao powder
  • 2-4 drops mint extract (or fresh mint blended in!)
  • 1 tbsp chia seeds (to thicken! Can sub with raw cashews)


Instructions: 
First, Preheat oven to 375F--->
As with most of our recipes -- for simplicity (er, laziness?) simply mix all the dry ingredients in a large bowl, then make a 'well' in the center, add wet ingredients, and mix mix mix mix --- pour into 1 (or 2, if you want a double-layered cake!!) 6 inch cake tin (greased with coconut oil) and bake for around 25-30 minutes, or until the knife comes out clean! Then, remove the cake from the oven, let it cool down a bit, anddd smother it in frosting! -- throw on some cacao nibs and fresh mint, and serve!*** 

*** you may want to put the frosted cake in the fridge a little to set before serving... But you do you. ;-)
