Coconut & Raspberry Chia Pudding

SERVES 4-5

  • 4-5 Medjool dates (or sweetener of choice)
  • 2 cans of organic coconut milk or coconut cream / almond mylk etc
  • 1 cup raspberries
  • 1/2 cup chia seeds
  • 1-2 drops of Vanilla extract
  • Pinch of Himalayan Salt
  • 2 packets of ALOHA Daily Greens in berry flavor [optional delicious booster]
Blend almost-everything except the chia seeds in a blender for 30 seconds, pour into a bowl or a large mason jar (or 3-4 smaller ones!), and mix in the chia seeds -- mixing very well --- place in the fridge to thicken up overnight, or for at least 1-2 hours! Sprinkle with coconut & raspberries! Viola! 
--- Optional beautifying add-in: a few rose petals or 1 tbsp rose water.
